2015年8月10日 讯 /生物谷BIOON/ --用昆虫给你做点意大利面或高蛋白饼干你觉得如何?近日,科学家们表示,3D打印食物似乎是人们健康饮食的一种新方式,而且其花费时间远比准备一顿美食要短很多,还可以帮助机体充饥。

研究者表示,在未来30年里3D打印将会成为家庭厨房的主要应用,其可以在准备美食及为饮食添加重要营养物的同时还可以大大节省做饭的时间。目前该测试已经在很多地方开始进行,比如在意大利研究者利用3D打印技术来制造意大利面调味料及烘烤的食品。研究者Michela Petronio说道,在未来3年里我们将通过努力开发出我们自己的设备,此刻这种3D打印仅是一个原型,其可以帮助我们打印出既定形状的意大利面。

下一步研究者将会关注不同打印成分的一致性和平衡性,当然这还需要很长一段路要走,在家用3D打印设备领域,第一个应用就要数西班牙的一个公司开发出的名为Foodini的设备了;Foodini是西班牙自然机器公司(Natural Machines)发明了一款3D食物打印机,让人们无须满身大汗的在炉火前烹煮,轻轻松松就能制作出美味食品。

研究者van der Linden介绍说,如今一台专业的用于面包和甜点制作的3D食物打印机大约在5000至10000欧元之间,当前的这种机器2分钟之内可以打印出15小片意大利面团,这远远不满足工业产品的开发需求,因此后期需要开发出新型的设备来提高3D食物打印机的工作效率。3D食物打印机的优势看起来非常诱人,但其却并不适合于每一个人。研究者Giorgio Calabrese表示,我们需要考虑的是当我们想吃东西的时候我们总是在寻找自己想吃点,因此可以准备好包含多种冻干营养物质的少量食物对我们来说则非常必要,而家用的3D打印机将可以为我们打印出由蛔虫做出的高蛋白饼干,这听起来确实挺恶心的,但在未来35年里,实际人口将会增长到95亿,远远超过现在的人口数量。

人口的持续激增意味着来自蛋白类食物需求量的加大,而人口数量的增加不得不使得昆虫、藻类及其它植物代替肉类和鱼类来为人类提供高蛋白营养,因此3D食物打印机就可以为人类准备天然的食物提供营养。(生物谷Bioon.com)

Not only a crafty deception to provide tasty food for astronauts. Over the next years 3D printers may become a household kitchen appliance, helping people save time when preparing meals or adding specific nutritious ingredients to their diet.

Several tests are already underway: for four years Barilla, the Italian corporation specialised on producing pasta, sauces and baked products, together with TNO, a research centre in the Netherlands, has been testing additive manufacturing prototypes to produce new shapes of pasta.

“After three years of efforts, we have developed our device,” explains Michela Petronio, R&D deputy head at Barilla. “At the moment, it is still a prototype allowing us to print pasta in shapes that otherwise can't easily be replicated. This is important because, you feel differently when eating spaghetti or penne and 3D printing opens a largely unexplored horizon in the field of food design”.

The next steps will  be about the consistency and balance of different ingredients: “There is still a quite long way to go,” adds Petronio, “but our aim is to consider which applications are the most interesting for our consumers”.

For home equipment, the first appliance on sale may well be Foodini, built by a Spanish company based in Barcelona, Natural Machine, that is hoping to sell it in a limited pre-series by late 2015. This appliance will cost about 1,500 US dollars (1,357 euros) and will have people taking home a machine using common ingredients.

“Our aim is to ease the way to prepare homemade healthier food. With an extra bit of fun on top”, says Lynette Kucsma, co-founder and chief marketing officer at Natural Machine.

What makes Foodini different is its ability to enable users to print not only one type of food, such as chocolate or sugars, but also to fill capsules with various sorts of ingredients. People can thus extend the range of printable food......
